Description

A wholesome, creamy, and crispy-topped casserole perfect for gluten-free holiday tables or comforting weeknight dinners.


Ingredients

  • 1 lb fresh green beans, trimmed and cut in half
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp gluten-free all-purpose flour
  • 1 cup chicken or vegetable broth
  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cups gluten-free crispy fried onions

Instructions

  • Preheat oven to 375°F (190°C).
  • Blanch green beans in boiling water for 3–4 minutes, then transfer to an ice bath to stop cooking.
  • In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  • Add mushrooms and cook until tender and moisture has evaporated.
  • Sprinkle gluten-free flour over the mixture and stir to coat.
  • Gradually add broth and almond milk, whisking continuously until thickened. Season with salt and pepper.
  • Stir in the green beans and half the crispy onions.
  • Transfer to a greased baking dish. Top with remaining crispy onions.
  • Bake uncovered for 20–25 minutes or until bubbly and golden on top.

Notes

Make sure your fried onions and broth are certified gluten-free for a fully gluten-free dish.
