- 1 lb fresh green beans, trimmed and cut in half
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tbsp gluten-free all-purpose flour
- 1 cup chicken or vegetable broth
- 1 cup unsweetened almond milk (or milk of choice)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cups gluten-free crispy fried onions
Instructions
- Preheat oven to 375°F (190°C).
- Blanch green beans in boiling water for 3–4 minutes, then transfer to an ice bath to stop cooking.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
- Add mushrooms and cook until tender and moisture has evaporated.
- Sprinkle gluten-free flour over the mixture and stir to coat.
- Gradually add broth and almond milk, whisking continuously until thickened. Season with salt and pepper.
- Stir in the green beans and half the crispy onions.
- Transfer to a greased baking dish. Top with remaining crispy onions.
- Bake uncovered for 20–25 minutes or until bubbly and golden on top.
Notes
Make sure your fried onions and broth are certified gluten-free for a fully gluten-free dish.
