1 box yellow cake mix
1/2 cup butter, softened
1 package (8 oz) cream cheese, softened
1 egg
1/4 teaspoon vanilla extract
Powdered sugar, for rolling
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, beat together the butter and cream cheese until smooth.
- Add the egg and vanilla extract and mix until combined.
- Gradually add the cake mix and mix until fully incorporated.
- Refrigerate dough for about 30 minutes until firm.
- Roll dough into 1-inch balls and coat in powdered sugar.
- Place on a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 10–12 minutes, until edges are set but centers are still soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For extra gooey cookies, slightly underbake and allow them to finish setting on the baking sheet.
