Description

Soft, sweet, and irresistibly chewy, these Gooey Butter Cookies are a melt-in-your-mouth treat perfect for any occasion.


Ingredients

1 box yellow cake mix

1/2 cup butter, softened

1 package (8 oz) cream cheese, softened

1 egg

1/4 teaspoon vanilla extract

Powdered sugar, for rolling


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat together the butter and cream cheese until smooth.
  3. Add the egg and vanilla extract and mix until combined.
  4. Gradually add the cake mix and mix until fully incorporated.
  5. Refrigerate dough for about 30 minutes until firm.
  6. Roll dough into 1-inch balls and coat in powdered sugar.
  7. Place on a baking sheet lined with parchment paper, spacing them 2 inches apart.
  8. Bake for 10–12 minutes, until edges are set but centers are still soft.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra gooey cookies, slightly underbake and allow them to finish setting on the baking sheet.
